A busy day for quick, simple meals

My wife fixed bacon and fried eggs for breakfast. One of my favorites, but I do miss the toast!

For lunch (pictured), I shredded some iceberg lettuce, added Roma tomatoes, green and black olives, and oil and vinegar dressing. I also cut up 1/2 an avocado, plus pan fried some cut in half broccoli (left over from Cracker Barrel) in the leftover bacon grease from this morning. Lastly, I had a slice of leftover paleo pizza and a small piece of leftover round steak. Also, I topped that with tomatillo salsa I made the day before (recipe to come soon).

Dinner was just some sliced chicken, pepperonis, and an assortment of olives. Very light.

Paleo Pizza

To start off, I made a paleo pizza crust from this website: fastpaleo.com. It was great! Very easy to make, and very good. I spread it out thinly and then moved it to a pizza pan.

One note on the pan I used. It was a mistake. Even though I sprayed it, the holes in the pan worked against this type of pizza crust. The dough firms up nicely but will slowly sag and seep. So it seeped into all the holes in the pan and effectively stuck to the pan after it was cooked. I was able to get the slices out ok, but I think a better way would be to use a solid pan, or even a rectangular cookie sheet in the future. But I digress…

I then went off-road and just started doing things that sounded good. First, I dumped 16 oz of tomato paste (of course, do all of the following according to your tastes) and spread it out evenly, stopping an inch or so before the edges of the dough. Next, I sprinkled on Italian Seasoning and Garlic Powder. Then I added liberal portions of sliced black and green olives. I covered the entire thing with sliced pepperoni and topped it with a bag of low dairy mozarella.

I had preheated the oven to 500 F, and cooked the fully topped pizza for 10 minutes, checked it, and then put it in for another few minutes after that until it looked done.

I was quite surprised when I tried it. If you had served it to me and not said anything, I would not have been able to detect the paleo ingredients, particularly the crust. Once or twice, and only when eating a piece of crust alone, I could taste a bit of sweetness, like coconut. But when diving into the full pizza with toppings, not even a hint. This is going onto my favorites list for sure!

Sausage and Egg “Muffins”

I took a large muffin pan, sprayed it with some coconut oil cooking spray, then lined the muffin tins with a layer of sausage to make cups for eggs. I used a large muffin tin with room for 6 muffins. This took 1 full lb of sausage. I cooked the sausage at 375 F for 5 minutes, then cracked an egg into each sausage cup and returned it to the oven. I did this because the sausage takes a bit longer to cook than the eggs. I then continued cooking until the whites had set (you can tell by using an oven mitt and shaking the muffin tin to see if anything still moves). All totaled, it was somewhere from 10 to 15 minutes of additional cooking. More or less depending on your oven temperature.

You have to play with this to get it the way you want, and I’m still working on it. I like a hard white, but a runny yolk. For the most part my yolks were just gooey, with only a little runny yolk left. But they were still delicious!

I ate 2 of these for breakfast, but then ended up having 1 more for lunch, as I was saving up for dinner!

Pepper Grilled Sirloin at Cracker Barrel

I ordered a medium cooked pepper grilled sirloin tonight at Cracker Barrel. For sides I got the steamed broccoli and the Tomato, Cucumber n’ Onion Salad. The broccoli was not great, and had no flavor at all. So I brought it home to slice in half and grill in bacon or sausage grease like I do with Brussels sprouts. The salad was better, but probably needed more vinegar. The steak, however, was great! Oh, and I did sneak one cornbread muffin with butter. But hopefully only a minor indiscretion. At least I avoided the biscuits and gravy, hashbrown/cheese casserole, and the chicken and dumplings!

Salad and Roasted Brussels Sprouts

Ok, maybe I’m in a rut, but it sure is good! I sliced a handful of Brussels sprouts in half and pan-cooked them in sausage grease from breakfast. Brushed a little olive oil on top as well. Also made a salad with hot banana pepper slices, avocado, and oil and vinegar dressing. Also had a sliced Roma tomato on the side.

Soft boiled eggs and sausage

Soft boiled three eggs and cooked two sausage patties for breakfast this morning. Eggs came out with the yolk just a little harder than I wanted, but still good nonetheless.

This was my first time to cook soft boiled eggs. Here’s what I did. Get some water boiling. There should be enough water to cover the eggs by a bit. Once it gets boiling, turn the heat down until it is just a simmer, just like you do when you poach eggs (more on that at a later date).

Using a long spoon, lower the eggs into the water. Today I set a timer for 6 minutes. The whites were completely done, but the yolks were not runny as I prefer. They weren’t hard boiled, but were just more gooey in consistency. I think next time I’ll try 5 minutes. Also, as you’re cracking open the first egg (carefully!), don’t leave the other eggs in the hot water. Otherwise they will continue to cook and the yolks will harden even more.

I cut my sausage patties into smaller pieces and then did the same with the eggs (salt and pepper to taste), grabbing an egg piece and a sausage piece together with every bite. Delicious!

Ceviche de Pescado!

This is what I had today for lunch at Mamaveca in Norman, OK – Ceviche de Pescado.  Best tortilla place in Norman (I know, I know, but I didn’t eat very many chips or tortillas.  I did have some, though – just couldn’t resist).

But this is raw marinated fish, very tart and tangy with a heavy lime influence (at least that’s what it tastes like to me).  Something akin to raw (and cooked) corn nuts, and sweet potatoes.  One of my favorite dishes!

Scrambled eggs with peppers

My wife cooked breakfast this morning.  Scrambled eggs with some assorted red and green diced peppers and sliced avocado.  Cooked in grass fed butter.  Very nice!

A Day of Leftovers

Boiled eggs and chorizo again for breakfast.  The last of both.  See here for details.

A late lunch today at Saltgrass. I had the Hill Country Sausage and Chicken Platter with steamed broccoli, carrots and green beans, plus a house salad with oil and vinegar. The meat was all grilled and not breaded. I did sneak a couple of small bites of bread, and there were three large croutons and a small amount of cheddar on the salad, but overall, a pretty paleo meal.

Lastly, for dinner I had a few slices of turkey bacon and an apple with almond butter. Lazy cooking day!
